Homebrewing Process

Fermentation

15.00 Gallons 14 - 16 Days 70.00- 75.00° F

Kegging

Keg beer with forced CO2 (25.00-30.00 PSI) to achieve 0.0 volumes of CO2.

Notes

We fermented the MaPale in a 15.5 gal stainless steel keg and racked into another for clarification and priming. A day before the party we placed the keg in clean plastic trash can, filled it with ice, wrapped the trash can with a blanket and placed CO2 at about 30 psi. Several times during the day and night the kegs were shook to help dissolve the CO2 into the beer. At the party both the Light amber and the Dark amber were consumed before the 10:00 that night with the Light amber version empty first.
