Panvostin Brewery Special: Dark ale crafted with pure maple syrup with a subtle hint of chocolate flavors.

3 lbs. 2-Row Pale Malt (Cargill)
0.25 lbs. Chocolate Malt (Brewferm)
0.125 lbs. Crystal Malt 45L (Crisp)
0.0625 lbs. Black Malt (Brewferm)
0.0625 lbs. Victory® (Briess)
Extract:
4 lbs. Light (Muntons)   -  Liquid Extract
Adjuncts:
  24 oz. Maple Syrup
  1 tsp. Irish Moss
  1 cups. Maple Syrup
Hops:
1 oz. Target (Pellets): 8 HBU
0.5 oz. Progress (Pellets): 2 HBU
0.5 oz. Progress (Pellets): 2 HBU

Steep

Notes

After sparge, bring to boil, remove from stove, and add:

4 lbs Muntons Light DME
24 fluid oz. maple syrup
1 oz. Target @ 8 percent AA (6.5 HBU) (bittering hop)

Continue boil for 45 minutes and add:

0.5 oz Progress (flavor hop)
1 tsp. Irish moss

Boil for 10 minutes and add:

0.5 oz. Progress (aroma hop)



After 60 min boil place container holding wort in ice bath and cool for 15 min.

Strain cooled wort into primary fermenter.

Wait until temperature is below 80F before pitching yeast.

Primary ferment for 1 week or until fermentation process slows.

Secondary ferment for 2 weeks.

Charge before bottling with 1 cup maple syrup.

Optional charge:
1/2 cup corn sugar
1/2 cup maple syrup
